A tall, aromatic perennial with finely divided, feathery foliage and golden umbels, adding structure, fragrance and pollinator interest to any sunny Irish garden.
Description

Growth habit & appearance: Foeniculum vulgare, commonly known as Fennel, forms a statuesque clump of finely filigreed, thread-like leaves that release a sweet anise aroma when brushed. Its hollow, architectural stems rise to carry broad umbels of yellow flowers, which later develop into the well-known aromatic seeds. The plant brings height, movement and a strong sensory element to any border.

Growing conditions: Fully hardy in Ireland, Fennel thrives in full sun and prefers light, free-draining soil where it can develop its deep taproot. In coastal or windy sites, its tall stems benefit from a degree of shelter, but the species is generally robust in Irish conditions. Once established, it copes well with dry spells and will overwinter cleanly, re-emerging strongly in spring.

Traditional & herbal uses: Traditionally associated with IBS, bloating, digestive gas and, in some traditions, supporting milk flow. Both leaves and seeds have been valued for their aromatic qualities.

Maintenance & harvesting: Harvest leaves throughout the growing season while young and tender. Remove spent flower heads if you want to limit self-seeding, as fennel can spread if left unmanaged. Stems can be cut back to the base in winter after dieback. In heavier soils, mulching in early spring helps maintain soil structure for its taproot. The seeds can be collected once the umbels have dried.
