The Wood Ear mushroom (Auricularia auricula-judae) is one of the oldest cultivated mushrooms in Asia, with documented use since the Tang Dynasty. Its name, “Wood Ear”, reflects its ear-like form growing on decaying wood. In Chinese it is known as Hei Mu Er (“Black Ear on the Wood”), while the unrelated Snow Fungus is known as Bai Mu Er (“White Ear on the Wood”).

Wood Ear is a widely distributed mushroom found in temperate and subtropical forests across the globe. It is extensively cultivated and valued in cuisine for its distinctive slightly crunchy texture.

Fully water-soluble, but may dissolve slowly and initially form small clumps due to its viscous heteropolysaccharide matrix. Continuous stirring or blending into smoothies will improve dispersion.
